    Default Crockpot: So Easy Pepper Steak

    Made this last night, SO easy and SO good!

    2 lbs round steak, cut into strips or cubes
    Salt & Pepper
    1 14.5oz can Italian Diced Tomatoes
    1 6oz can Tomato Paste
    1 tbs Hot Sauce
    1 16oz bag frozen pepper & onion mix (sometimes called Fajita mix)

    Put the meat in the bottom of the slow cooker, sprinkle with salt & pepper.

    In a bowl, mix together diced tomatoes, tomato paste and hot sauce. (I added some italian spices here too) Pour over meat.

    Place frozen vegetables on top.

    Cover and cook on Low for approx. 8 hours.

    Mix together and serve over noodles or rice, or your choice.

    Divided into 6 servings, would be approx. 6 points, plus noodles or rice.

    I used 1lb and got 4 servings for 5 points.

    I made this over the weekend. I figured it was a good way to get in some veggies. It was wonderful, and very easy. I did one thing differently. I cut the steaks into 6 portions, rather than slicing it into smaller pieces. I think it was easier to portion out the food that way.

    Wow! This was SO good! My DH doesn't like to eat a lot of chicken, so I try to find low-points recipes with red meat in them. We both loved this one. I left my four small round steaks whole (1 lb) and used tomato sauce rather than paste. This will definitely be a repeat at our house!

    I am bumping this up. I made this last night and DH loved it. We put it over brown rice. I used tomato sauce instead of paste and two bags of pepper stir fry veggies. It was delicious.
