    Default wonderful pumpkin berry muffins

    I have developed this wonderful muffin receipe-- my whole family is addicted to them. Hope you enjoy. This is a double receipe which makes 24 muffins. I have figured them at just under two points. Maybe someone could calcutate them for me for sure.

    Pumpkin Berry muffins

    Dry ingredients:

    2cups all purpose flour
    1 1/2 cups wheat flour
    1 tsp baking soda
    3 tsp baking powder
    1 tsp salt
    1 1/2 tsp cinnamon
    1/2 tsp nutmeg
    2 cups splenda

    wet ingredients:
    1 15oz can packed pumpkin
    1 cup unsweetened applesauce
    1 1/2 cup fat free plain yogurt (can substitute fat free sour cream)
    4 egg whites
    Berries:
    2 cups dried cranberries
    2 cups frozen blueberries

    Mix dry ingredients first in large bowl, then mix in wet ingredients with mixer.
    Stir in 2 cups dried cranberries and 2 cups frozen blueberries. Spray bottom of two muffin pans with canola spray. Fill 24 muffin cups with batter. Bake at 350 degrees for about 30-35 minutes or until knife comes out clean.

    I ran it through MasterCook, and got about 1.5 points per muffin!! Sounds great!

    Thanks so much Cathy-- I guess I had it figured pretty close then. I have just been unsure if I figured flour correctly. I caculated 8 pts per cup.

    Can I ask a question from those who have made these muffins? Does it take that much Splenda, or could it safely be cut way down? That just seems like a huge amount of sugar to me ...... I am going to make up a batch because they sound wonderful, but was wondering if I can cut the sugar amount down safely. Thanks y'all!!!

    Missy, It is safe to say that you can cut way down on the amount of splenda you use. I generally use 1/2C in a batch of muffins and am happy with it, but everyone should do what works best for them.

    Thank you for giving me an answer WnderLander. I am hoping to find the time to make these this week but I'll definitely be cutting down on the sugar amount. 2 cups of Splenda is something like 192 calories and I'm trying really hard to keep the sugar down to a minimum in everything I make and eat.
