    Thumbs up Chicken Philly Cheese Steak

    This was made on the fly and boy was it great! Dh, dd and I loved it!

    I purchased 1 lb containers of mushrooms from the store on Tues. and they were going to go bad so yesterday I sauted them with onions.
    I did not use any oil when sauting the onions. I put onions (slice one onion thin) in the pan and allow them to "sweat", I use a piece of aluminum foil and put into pan to loosely cover onions. Once onions are translucent I add sliced mushrooms and some salt. Sauted til done and DONE! NO POINTS. Sometimes if I want extra flavor I add 1 tsp of oil to the onions before the mushrooms, but you really dont need it.

    Chicken Philly Cheese Steak - Serves 2 hearty portions

    1 lb mushrooms sauted with 1 onion (0 pts)
    2 chicken breasts sliced very thin (slice it with a sharp knife when it is partially frozen) (depends on weight of chicken)
    1/2 - 1 onion sliced thin (0 pts)
    1 tsp. oil (1 pt)
    1/4 cup part skim mozzarella cheese (2 pts) (seriously, thats all you need)
    3-4 TBSP ketchup (1/4 cup is 1 pt -- 3 TBSP is less than that!)
    White -wheat hot dog rolls (1 pt each)

    1. On med- hi heat add onions to pan, cover with foil and cook until translucent.
    2. Add 1 tsp oil.
    3. add sliced chicken ans cook until chicken almost fully cooked, lower heat.
    4. Add sauted mushrooms and onions
    5. Add 1/2 cheese
    6. cook until cheese melts, add ketchup and cook until all is heated.
    7. Serve open face on hot dog roll.


    Points: This depends on the weight of the chicken. With each chicken breast about 5 pts each you are looking at approx. 7 pts and worth every penny!
    If you like Philly cheese steak you have got to give this a try, soooo good!

    An addendum:
    I was in my car yesterday (running around for last minute Hanukkah gifts, teacher gifts and stressed out -- as always right before the holidays) listening to our local NBC station and Martha Stewart's show was on. She was talking a bit about using foil and parchment paper over top veggies to cook them. I missed most of the segment, but she spoke of laying the parchment paper down on the veggies THEN the foil because the parchment is "pure". I guess the parchment paper is better for the veggies to touch than the foil. I wanted to pass that along to all, didnt want to "impurify" anyones veggies, heavens no!!!
    I dont know, I cook with foil all the time, so not sure what the parchment will do. Maybe someone can try it and rely back on a difference.

    We made this a few nights ago. It was pretty darn close to Philly Cheese steaks. Close enough for us at least! We just sauted the onions and mushrooms together, then in a separate pan, cooked then chicken then added it all together. We didn't slice the chicken, just made them into small cubes. Also we didn't use ketchup in this at all either. DB loved it and he loves Philly Cheese steaks out to eat so this one is definatly a keeper!

    I made this tonight and DH and I both loved it. Of course we all make our little changes:

    Chicken Philly Cheese Steak -serves 2

    1lb mushrooms sauteed with 1 onion (I will add a green pepper and garlic, too)
    2 chicken breasts sliced thin in a tad bit of evoo
    1/4 c part skim mozz cheese (used cheddar also for dh)
    4 T ketchup (I'll prob use ff mayo on the bun instead)
    White Wheat hot dog rolls

    1) On med high add onions, mushrooms and evoo
    2) Add sliced chicken and cook until done
    3) Add 1/2 of the cheese (I just sprinkled all the cheese on at the end)
    4) Cook until cheese melts and add ketchup and cook until it's heated
    6) Serve open face on hot dog roll (I will also sprinkle the sandwich with shredded lettuce)
    7) Sprinkle with the rest of the cheese.
