Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    DOUGHNUTS:
1 cup whole wheat pastry flour
2 tablespoons whole wheat pastry flour
    3/4 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    1/8 teaspoon salt
    1/2 cup sugar
    1 tablespoon unsweetened applesauce
    1/3 cup unsweetened applesauce
    1 tablespoon buttermilk
    1/3 cup buttermilk
    1 large egg
    1 1/2 teaspoons canola oil
    1 teaspoon vanilla extract
    GLAZE:
    1 cup confectioner's sugar
    2 tablespoons apple juice
    1 teaspoon vanilla extract

    1. Position a rack in the center of the oven and preheat to 350 degrees F. Generously spray six 4-inch nonstick mini-fluted tube (Bundtlette) pans (Nordic Ware) with oil.

    2. To make the doughnuts, in a medium bowl, whisk the flour, baking soda, cinnamon, and salt until well combined. Set aside.

    3. In another medium bowl, using a handheld electric mixer set at high speed, beat the granulated sugar, applesauce, buttermilk, egg, oil and vanilla until frothy about 1 1/2 minutes. Make a well in the center of the dry ingredients, and pour in the applesauce mixture. Using a spoon, stir until just combined. Do not overmix.

    4. Divide the batter equally among the prepared molds. Bake until the tops spring back when pressed gently around the edges, 15 to 20 minutes. Do not overbake. Cool the molds on a wire cake rack for 5 minutes. Then, run a knife around the inside of the molds to release the doughnuts. Invert onto the rack and cool completely.

    5. To make the glaze, whisk the confectioners' sugar, apple juice, and vanilla until smooth. Drizzle over the tops of the doughnuts. (I leave my cooled doughnuts on the wire cake rack, set the rack on a piece of waxed paper and then drizzle the glaze. The extra glaze drips onto the waxed paper). Let stand until the glaze is set, about 30 minutes.
