    Slow Cooker Chicken Cacciatore

    main meals | Serve this classic Italian stew plain or over whole-wheat penne. For a spicier flavor, add a pinch of crushed red pepper flakes at the start of cooking.

    Ingredients

    1 pound boneless, skinless chicken thigh(s), cut into bite-size pieces
    1 cup mushroom(s), sliced (fresh, frozen or canned)
    1 cup green pepper(s), sliced (fresh or frozen)
    1 cup onion(s), chopped (fresh or frozen)
    1 large garlic clove(s), minced
    1 Tbsp canned tomato paste
    14 1/2 oz canned crushed tomatoes, fire-roasted
    1/4 cup red wine, dry-variety
    3/4 tsp dried oregano, crushed
    3/4 tsp table salt, divided
    1/4 tsp black pepper


    Instructions
    1. Place chicken in a 3- to 5-quart slow cooker. Add mushrooms, green pepper, onion, garlic, tomato paste, tomatoes and juice, wine, oregano, 1/2 teaspoon of salt and black pepper.
    2. Cover slow cooker; cook on high heat for 5 to 6 hours or on low heat for 6 to 8 hours. Taste just before serving and add remaining 1/4 teaspoon of salt if necessary. Yields about 1 cup per serving.

    Thanks for posting this Marie. I am always looking for new crock-pot meals! I've printed it up and might give it a try next week.

    I made a crock of this today for the week! It was super easy and the house smelled delicious all day. I think we will have it on Tuesday, so I will let you know how it tasted!

    Delicious meal! Next time I will add more veggies and go for the shortest cooking time. A keeper!

    The morning I had planned to prepare this recipe, I had to run out the door unexpectedly. Therefore, being a (somewhat) experienced cook, I just went with the flow and baked it in the oven. First, I browned the chicken in "Pam" and seasoned it with a tad of Lawry's seasoning salt, garlic powder, onion powder, and black pepper. I put the browned chicken in a casserole dish. Then I sauteed all the veggies and placed them in the casserole dish (over the chicken). With the wine, I "deglazed" the pan and added the tomatoe paste and tomatoes. I poured that mixture over the chicken/veggies, gave it a good stir, and baked it at 325 (covered) for one hour.

    It was DELICIOUS!!!!!!!!!!!!!!!!!!!!! My husband and kids thought it was fab, too! It's a keeper -and quite a "staple"!

    I made this in the oven, like Starry, except I broiled the chicken first to eliminate even more fat, and I brought the sauce to a simmer first, then baked the whole thing only 30 minutes, which was plenty long. I took suggestions and added another colored bell pepper, and an extra portabella mushroom.
    I forgot to add the tomato paste--That was a mistake - the sauce was thin. It was good, however, for me, it needed more spices. An easy fix at the table.

    OHHHH BOY!!!

    My house smelled like an amazing Italian restaurant all day and this was amazing.

    My DH looked at me and smiled, "you are making this again...please?!"

    I highly recommend this one...very highly...
