These are wonderful to make and have ahead to grab while on the go for breakfast. The whole recipe I figure to be 9 points.

1 1/2 cups oat flour (I make my own in food processor)
2 tsp baking powder
1 tbs pumpkin pie spice (or more to taste)
1/2 cup splenda (or to taste)

Mix all dry items together

1 cup canned pumpkin (I use half a small can)
1tbs Brummel and Brown or low fat spread
1 egg (or eggbeaters to lower points to 8)

Mix ingredients together and put in a greased floured bread pan, or 8X8 square pan
Bake at 350* for 25 mins or until toothpick comes out clean.
Cool and cut into 8 servings. If you use eggbeaters it is 1 point per serving, if a whole egg, I guess a bit over 1 point each.

Oh my gosh, they are wonderful cold, or sliced and toasted in the oven in the morning. You can also add raisins and count the points if desired, ENJOY!
