Can't take credit for this one, but I tweaked it to make it core

3t olive oil
~1/4 c minced onion
~1/8 c minced garlic
2 lbs. 4% fat ground beef
1 can northern white beans
1 pkg. minute brown rice, cooked
4 8oz. cans tomato sauce or crushed tomato
1 zucchini, diced
6 large green peppers
1 t garlic powder
1.5 t Italian seasoning

- Preheat oven to 350
- Core out all green peppers and arrange into pan sprayed with cooking spray
- Saute onion and garlic in oil and add ground beef until brown
- Add beef, beans, rice, 3 cans of tomato sauce, and zucchini to a large pot and simmer for about 10-15 minutes, until zucchini is cooked.
- Spoon mixture evenly into all 6 peppers
- Mix last can of tomato sauce with 1 t garlic powder and 1.5 t Italian seasoning and baste top of peppers
- Cook for 15 minutes and re-baste peppers
- Cook for another 15 minutes and re-baste peppers
- Cook for another 15 minutes, or until peppers are soft.

This makes 6 HUGE peppers...I could only finish 1/2 at a time. Very good. You can add a little crushed red pepper seeds to make it a little spicy if you like!!
