    Default Fruit Blitz

    A change of pace for breakfast. These are very rich and filling.

    FRUIT BLITZ

    Breakfast | Ingredients


    2 1/4 cup Egg Beaters Egg Beaters
    1/2 cup all-purpose flour
    1/4 cup cornstarch
    1/8 tsp table salt
    3 cup fat-free skim milk
    16 oz fat-free cream cheese
    1/2 cup powdered sugar
    2 cup frozen unsweetened mixed berries

    InstructionsCREPES: Combine first FIVE ingredients. In a bowl beat the eggs with flour, cornstarch and salt. Stir until smooth. You can also do this step in a blender for 20 seconds..
    Spray a saute pan with butter flavored spray and heat on medium high for 1 minute. Pour a cup of batter into skillet. Turning pan to completely cover bottom and up sides slightly. Cook over MEDIUM heat until set. Approximately 1 minute per side. Keep in warm oven between waxed paper or paper towels.
    FILLING: The cream cheese should be softened. You may or may not want to puree the fruit. Either is fine. Blend the cream cheese with the powdered sugar. Reserve some to sprinkle on top. You can add a bit of the fruit with the filling, or just add it on top. Place about 1/4 cup filling on each crepe and roll up tightly. Placing seam side down in a baking dish. Pour Fruit over the crepes and sprinkle with powdered sugar. You can also add cool whip, but will need to account for those points.
    Serve and enjoy.
    (8-25-06) I spoke to my daughter who made this recipe last week and she said she halved it and it fed four adults. She thought it made 8-10 crepes. The crepes with filling can also be made ahead and then reheated later with the topping added)
