    Default Lemon Raspberry Muffins - 2.5pts

    Raspberry Lemon Muffins

    Prep Time: 15 Minutes
    Cook Time: 15 Minutes Ready In: 30 Minutes
    Yields: 6 servings
    1/4 cup plain yogurt
    1 tablespoon vegetable oil
    1-1/2 teaspoons lemon juice
    1 egg white
    1/4 teaspoon lemon extract
    3/4 cup all-purpose flour
    1/4 cup white sugar
    1 teaspoon baking powder
    1/8 teaspoon salt
    1/2 teaspoon grated lemon zest
    1 cup fresh or frozen raspberries

    1.Preheat the oven to 400 degrees F (200 degrees C). Grease a 6 cup muffin tin, or line with paper liners.2.In a large bowl, mix together the yogurt, oil, lemon juice, egg whites, and, if using, lemon extract. In a separate bowl, stir together the flour, sugar, baking powder, salt, and lemon zest. Add the wet ingredients to the dry, and mix until just blended. Gently stir in the frozen raspberries. Spoon batter evenly into the prepared muffin cups. Sprinkle remaining sugar over the tops for decoration, if desired.3.Bake for 15 to 17 minutes in the preheated oven, or until the top springs back when lightly touched. Cool muffins in the tin on a wire rack.

    These sound great. However, the raspberries here are $3.50 a pint - lol.

    Could probably make it with some other fruit too.

    That looks good. You can buy frozen raspberries for much cheaper than fresh. Trader Joe's has a great brand and the price is good.

    I made these with blueberries this am...I did not have yougart, but had lf I made them with that...I also use raw sugar, so did that...

    I will use a bit less berries last time ~ they had more berries than dough. The flavor was absolutely amazing, as was the texture...I could probably eat them all day.

    thanks for the recipe! Dh loved them and said, a few less blueberries, but they taste like restraunt muffins...
