    Default Hamburger Casserole=6pts

    Makes 6 servings
    Ideal slow-cooker size: 4 or 5 qt

    1 1/2 pounds extra lean ground beef
    1/2 teasp salt
    1/4 teasp ground black pepper
    2 large potatoes, sliced
    2-3 medium sized carrots, sliced
    2 cups frozen peas
    2 medium sized onions, sliced
    2 ribs celery, sliced
    10 3/4 oz can low-sodium tomato soup
    soup can of water

    1. Brown ground beef in a nonstick skillet over medium heat. Season with salt and pepper.

    2. Layer vegetables into slow cooker in order given.

    3. Place ground beef on top of celery.

    4. Mix tomato soup with water. Pour into slow cooker.

    5. Cover. Cook on low 6-8 hours or on high 3-5 hours.

    Per serving: Calories 320, Fat 11g total (4 saturated,0 trans) 40mg chol, 360mg sodium, 28g carb (5g fiber, 7g sugar), 28 g protein, 100%DV vitamin A, 30% DV vitamin C, 4% DV calcuim, 25% DV Iron.

    Sounds really good and will give it a try. I'm for anything with ground beef that uses a crockpot!

    The recent recipes I posted are from: Fix It and Forget It..lightly Healthy, low fat recipies for your slow cooker..

    Although..some of these recipes are not only high calorie..but in my opinion high fat too! I will be posting more from this book..but not the ones that are bad choices! I haven't tried these yet, so let us know if they are good!

    Me and my hubby like to spice things up a bit... umm, with cooking that is. I like the hamburger idea with this, seems maybe a bit bland for my taste. I don't have a great knowledge of spices. Any idea's on what sorta spice to add to this to jazz it up a bit?

    A little chili powder and cumin would give it a hint of a chili taste, you might try that. Or some powdered cayenne or habenero, or perhaps some of your favorite hot sauce?

    Another idea might be instead of the tomato soup, run a can of Rotel diced tomatoes with chilis through the blender as a substitute.

    This was excellent, but cut back on the onions -- 2 is just too much. I didn't have any carrots so used 1 bag of frozen mixed veggies and everyone loved it.

    This is really a great recipe! I've made it twice and my whole family loved it!
