    Default Onion Muffin Tops=2pts

    Yield: 10 (2 muffin tops) Servings
    Prep Time: 10 minutes
    Baking Time: 12 minutes or less

    1 small onion, thinly sliced (not frozen) about 3/4 cup
    2 egg whites (or 1/4 cup liquid egg sub)
    1 cup minus 1 tablelspoon fat-free low-carb milk
    1 tablespoon lemon juice
    2 cups reduced-fat all purpose baking mix (Reduced fat bisquick)
    1/4 cup no sugar added applesauce
    1 tablespoon minced dried onion (or Mrs. Dash Minced Onion Medley)

    Preheat oven to 400
    Spray 20 muffin cups of 2 muffin pans with nonfat cooking spray.
    Separate the onion rings and place in small nonstick skillet that has been sprayed with nonfat cooking spray. Cook on high heat for about 1 minute or 2, just enough time to sear the onions until lightly browned, stirring occasionally. Remove from heat.

    In a medium sized mixing bowl combine the egg whites, milk, lemon juice, baking mix, applesauce, and dried onions. Use a spatula and stir the ingredients until just blended. The batter will be lumpy.

    Put 1/8 cup (2 tbsp) batter in each prepared muffin tin cup.
    Place several cooked onion rings on top of each muffin.
    Bake for 12 minutes.

    Wow! These sound delicious! If I ever have company over again, I'm making these. (I wouldn't trust myself with a whole batch of them!)

    the muffins were good, but I have to say, the muffins didn't have quite as much flavor as I had hoped so I'll have to work on that. Thanks for sharing the recipe.
