    Default Quiche Cups

    I finally got around to making these this week-end and they are delish. They are going to be my camping breakfast food. I think they would even be good just veggies and leave out the bacon. The cream cheese is a nice texture.

    Ingredients

    3 oz Kraft Philadelphia Brand Free Fat-Free Cream Cheese
    2/3 cup Knudsen Fat-Free Sour Cream
    1/2 cup Egg Beaters Southwestern, Refrigerated
    1/2 cup low-fat Swiss cheese ( I used LF Colby-Jack)
    4 slices reduced fat uncooked bacon
    2 Tbsp sweet red pepper(s) (I also added onion)
    1 item Pillsbury Grands! Homestyle Reduced-Fat Buttermilk Biscuit(s)
    1/4 tsp ground oregano


    Instructions

    In a mixing bowl, beat cream cheese and sour cream until smooth. Add eggs; mix. Stir in swiss cheese, bacon, red pepper, and oregano. set aside. Separate dough into 10 biscuits; flatten into 5 inch circles; Press into the bottom and sides of a greased muffin cup. Divide the egg mixture among biscuit lined cups. About 2 Tablespoons per biscuit.
    Bake at 375 for 18-20 minutes or until a knife inserted comes out clean. let stand 5 minutes before removing and serving.

    These are very good but NOT 2 points each. I believe that the OP figured out the recipe using only one bisquit for the entire recipe. I'm assuming that's a mistake. The way I figured it, with a package of 8 bisquits, it was six points each.

    Instead of using the Grands kind, I wonder if you could use the same kind that's used in the Cheesy Chicken cups so many of us are fond of?? I can't remember the exact type of biscuits, I'll look and try to come back with it.

    It's these:
    (7.5 oz.) can of refrigerated homestyle or buttermilk biscuits

    I know the Grands are much bigger than 7.5 ounces!

    I ran it through the recipe builder with the online tools, but I bet that it is including just one biscuit! I know that when I made them I did NOT use one biscuit per cup, but rather peeled the grands layers apart and used it that way. Thanks for the heads up on the points!
    OKAY~ This bothered me that I was posting a recipe that was so off in points. I ran it through the recipe builder 4 times, using different biscuits and it stayed at two points. This is the final change that I made, which I am assuming would be the lower fat Grands biscuits. Five biscuits, torn into two pieces per biscuit for the cup for a serving total of 10.

    Thanks so much for the clarification. When I saw the 6 points I was really feeling sorry for myself because the recipe looks really good.
