Thread: need pts for apple cinnamon muffins

  1. Default need pts for apple cinnamon muffins

    Hope someone can help me with the points for the following recipe.

    apple cinnamon muffins

    1 c skim milk
    1 1/2 cup wheat bran flakes
    1/4 c brown sugar splenda
    1 1/2 c whole wheat flour
    1 Tbl baking powder
    1 cup no sugar added apple sauce
    2 egg whites
    1 teas vanilla
    1 teas cinnamon

    1.combine 1st milk, bran flakes, splenda, and let sit for 15 minutes

    2.combine eggs, apple sauce, vanilla

    3.combine flour, baking powder, cinnamon

    add mixture #1 to mixture #2, then fold the dry #3 mixture, to the liquid

    can add apple chunks, or other fruit

    Spray 12 section cupcake pan, or use metal cupcake papers

    Bake 350 degrees for 25-30 minutes

    I just made these and they were great!! Taste also like the ones that Sweet Tomatoes Restaurant make, but not as brown.

    I ran this through Master cook and got 1 point per muffin, however, MC didn't have an entry for Wheat Bran Flakes so I used wheat flakes which is what they had. I don't know if it's the same thing or not. Do you have the nutritional info for that? The wheat flakes in MC were 188 calories, 4 fat, 37 fiber for 1.5 cups. Does that sound right? The fiber seems pretty high, but I don't eat wheat flakes so I don't know. Also I didn't have NI for the Brown Sugar Splenda. It's my understanding that it's half Splenda half Brown Sugar so I just put in 1/8 cup each. If this is not the case it could change the NI

    I used the Kroger Bran Flakes and the nutrition information is:

    3/4 cup calories 110 .5g fat and 5g fiber

    I didn't have regular splenda, so used the brown sugar splenda, and that nutrition info is:

    1/2 tsp equals 10 calories, 0 fat, 0 fiber (12 teaspoons equals 1/4 cup)

    It's no problem.

    Unfortunately those changes push it up to 2 points per muffin.
    The carbs and protein wont be accurate because I only had the calories, fat and fiber for the flakes.

    Wow, I guess I'll have to tweak this so I can get closer to 1pt.

    Sure wish I knew what was in the "Sweet Tomatoes Restaurant" apple cinnamon muffins, because they only have 1 pt, and are really good!!!

    Just in case anyone else is interested, I ran this through with just subbing regular Splenda for the Brown Sugar Blend and that brings them back down to 1 point.

    Per Serving (excluding unknown items): 92 Calories; trace Fat (4.8% calories from fat); 3g Protein; 15g Carbohydrate; 3g Dietary Fiber; trace Cholesterol; 143mg Sodium. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Fruit; 0 Non-Fat Milk; 0 Fat; 0 Other Carbohydrates.
