Egg Quesadilla

I actually got this from Dr. Weil and then modified it a bit to make it more WW friendly. I had it for breakfast this AM and it was DELISH. And for only 2 pts, you could afford to add a few sausage crumbles.


1/4 cup Egg Beaters
1/8 cup low-fat shredded cheddar cheese
1 Tbsp salsa ( I used the fresh salsa)
1 small tortilla, flour, fat-free


Preheat oven to 350. Lightly spray a cookie sheet (or other bakeware) with a little pam.
In a skillet, lightly spray with Butter flavored Pam. Cook 1/4 C Egg Beaters. (I used the South Western style) until just set, fold in cheese and salsa. Place on tortilla. Fold over and place on cookie sheet. Bake for 5 minutes or until tortilla is crisp.
