Spinach Feta Pizza
adapted from Moosewood Restaurant Cooks at Home
1 unbaked pizza crust (I used Boboli Whole Wheat)
10 oz. fresh spinach
1 cup fat-free ricotta
1 cup crumbled feta cheese (I used full-fat)
1/2 cup sliced green onions
1 Tbsp. chopped fresh dill
Sprinkle fresh ground pepper
2 sliced tomatoes, or 6 halved cherry tomatoes
1. Preheat oven as directed for prepared pizza crust.
2. Wash, de-stem, and coarsely chop spinach. Steam until wilted. Drain and squeeze out excess water.
3. In a bowl, mix spinach, ricotta, feta, green onions, dill, and pepper.
4. Spread mixture over pizza crust. Top with sliced tomatoes.
5. Bake as directed for prepared pizza crust.
