    Question cake

Anyone hear of a cake where you use any cake mix and then diet soda? I am looking for the recipe to try this weekend for a bday cake. Also any ideas for low point frosting?? Thanks!

Yes! I just made one last week and used a Devils Food Cake mix with 1 can of Diet Coke. I did not ice mine, but I have heard of others using FF Cool Whip and a pkg of SF/FF pudding mix. I made cupcakes and they were 2 pts each. They were yummy and very moist!!

    That is the recipe:

1 box of your desired cake mix
1 an of diet coke or sprite or whatever flavor you want to use

Mix and bake as per package instrutions. Comes out great

    Hope that helps!

OOOO!!! I make this strawberry cake that is wonderful!

    1 box white cake mix
12 oz diet strawberry flavored soda (you can find it at wal-mart)
1 container of FF cool whip
1 4 serving box SF strawberry jello mix

Just pour the soda into the cake mix and then bake normaly. Mix the jello into the cool whip and then frost. Just make sure to keep cake (or cupcakes) in the fridge. What I do is just make 12 cupcakes that way it is like perfect portion control and its only 2 pts. each!

Can you elaborate? You just use the diet soda and cake mix? Nothing else? Do you make adjustments for high-altitude directions?

What are good combinations? How does the diet soda affect the flavor/consistency of the cake?

Yes. It is just the can of diet coke and a cake mix. My cupcakes I made were no different than what I would normally make except I think they were more moist! You can mix and match flavors of soft drink and cake mix. I don't know about the high altitude directions.

    Very cool.

How do you calculate points for the dry cake mix? (Since that is where all the points come from, right?)

    I used:

1 can Diet Rite 'Tangerien' soda
1 box french vanilla cake mix

Used just a little lite cool whip as a topping

    yummy

    we also did

1 can diet wild cherry pepsi
    1 box chocolate cake mix

    that was really good to.

Everyone liked both of those....even the people that weren't watching their weight.

    Experiment!

May I suggest the pumpkin recipe for this? Try using one box of chocolate cake mix, 1 15 oz. can of pumpkin and 1 cup of water. cake or cupcakes, it comes out fudgier and less sticky plus adds the benefit of pumkpin. It is very good. Try mixing light cream cheese and cool whip for a topping!

according to my cake mix direction, if you make 18 cupcakes they come out to 2 points each. Just add up the nutritional info for your cake mix, and divide it by how many you decide to make.
I find that 18 are a good size, especially for 2 points. everyone loves it when I make them and bring them to work. I have also done it with spice cake mix, and another girl did it with carrot cake mix.

I just made cupcakes using the spice cake mix and one can of pumpkin. I made 18 cupcakes and the point value for each was 2pts. I also took them to work and everyone including the people not watching their weight just loved them. They were very moist and lots of flavor.

I'm going to try a choc cake mix and diet soda next.

I have found that if I use a diet cream soda you can't tell any difference between the soda version and the egg/oil version of a cake mix. Using other flavors is fun too, but if you are craving a particular cake mix flavor, just use the cream soda and it will taste normal.

My husband's favorite is cinnimon swirl cake and cream soda w/ a little FF cool whip.

I do the pumpkin with cinnamon swirl ~ its the best, to our family. I throw a bit of pumpkin pie spice into it sometimes, and recently at a womans meeting I made it and served whipped light cream cheese mixed with lf cool whip ~ it was the bomb and every body loved it. I actually let my kids eat the pumpkin cake for breakfast ~ it is one of their favorites and it stays with them through the morning1
