Hey guys and gals

I just created this realllllllllllly good lunch. I'm sure that somewhere in the world someone has already created it, but somehow I just wanted something different than my regular eggbeater sandwich.

Okay...here's the recipe:

2 small white corn tortillas (.75 points for 2 of them)
1/4 cup egg beaters (.75 points)
reduced fat cheese ...just a sprinkle (1 point)
2 thin slices of baked ham (2 points)
1 tbsp of light sourcream/tsp. salsa (.25 points)
dash of Frank's Red Hot sauce

Spray some PAM in skillet. Scramble the egg beaters. Put in bowl. Set aside. Put one of the tortillas down and cook for few minutes. Add the scrambled egg beater, 2 slices of the ham, cheese, a dash of the hot sauce and add the other tortilla on top. Press down with spatula and flip. Cook for another few minutes until cheese melts. Remove and put on plate. Put sour cream and salsa on top. A little bit of pepper and VOILA!!!! it's soooooooooooo good. I have no idea what to call it. I was thinking of "Mexican Eggbeater Quesadilla" what do you think??? If you all try it, let me know what you think.
