This is a recpie I love to make on Sunday mornings. Its a great breakfast or brunch. I tend to mix things up and view this recpie as more of a method than an exact recpie so feel free to make changes to fit your tastes.

1 small sweet potato - diced small
1 small onion - diced
1/2 bell pepper - any color - diced
2 pts. worth of Canadian Bacon (the brand I buy is 4 slices for 1 pt.) - diced
4 eggs (or egg substitute)
2 oz. low fat cheese

Heat skillet over med high, spray with cooking spray. Cook potatos for about 2 - 3 minutes, then add in onion and pepper. Cook until veggies are almost tender then add in Canadaian Bacon. Cook under veggies are tender and bacon is cooked. Put veggies and bacon in serving dish and top with cheese. Then cook eggs however you like (I like them sunny side up because I like the yolk mixed in with everything). Place eggs on top of cheese.

This makes 2 servings and 7 points per serving.
