    Default Instant Oatmeal Breakfast Cookie

    Okay, here's a recipe I tried this morning. I love the Big Breakfast Cookie, but it has too much fat in it for me. (I like to keep my breakfast light). So I wondered what I could do with a package instant oatmeal, and here's what I came up with. It turned out very soft and moist. I used a generic brown sugar flavor, but I'm sure you could experiment w/ other varieties.

    Instant Oatmeal Breakfast Cookie

    Amount Measure Ingredient -- Preparation Method

    1 package brown sugar instant oatmeal
    2 - 3 tablespoons applesauce, unsweetened
    1/3 teaspoon cinnamon
    2 tablespoons raisins
    Combine ingredients and pat into a circle on a greased cookie sheet.
    Bake at 350 for 8 - 10 minutes.

    EDIT: Might use less applesauce, so I changed ingeredients to 2-3 tbsp.

    is 1/2 cup dry oatmeal.

    I tried this last night...Yummy in my Tummy! My DH was a little put out that I didn't make cookies for him! (like he didn't eat enough cookied during Christmas???!?)

    I love having oatmeal, it has such great health benefits, but I'm not good with the texture. This is an awesome idea and it tastes wonderful! I used Kashi Cinnamon and Raisin oatmeal... tomorrow I'm going to try it with the vanilla oatmeal. It'll be so easy to whip up after I get out of the shower and pop it into the oven... Perfect for in the car with my coffee in the morning. Thanks for sharing!

    I ran out of applesauce yesterday so I made this today with a Tablespoon of Egg Beaters... it turned out wonderfully! I just counted the same amount of points since I was in a hurry this morning.. so I need to figure them up. I was going to do total calories/fiber/fat...

    I have to be honest...I thought it was yuck. Very gummy...mine took 16 minutes to cook even though we spread them out thin...My kids loved them, they were THRILLED to be eating cookies for breakfast. It was a FUN project, for sure, but if we do them again it will be just for them.

    This was ok. I added 2 packs of splenda. I think I will only make this if I really need to get in my oatmeal. I don't really like oatmeal in its regular form, but I include it in my diet for its health benefits.
