    Default Recipe Request - Italian Beef

    Does anyone have a low fat recipe for Italian Beef? I would appreciate it.

    Okay, I found a low fat recipe, but the problem is that it says how long to cook on the stove-top, but not how long to cook in a slow cooker. Can someone help me out? Surely it wouldn't be the same amount of time!

    Slow Cooker Italian Beef
    *Ingredients:
    1 pound thinly sliced roast beef
    1 (.7 ounce) package dry Italian-style salad dressing mix
    1 (16 ounce) jar pepperoncini, sliced
    1 (10.5 ounce) can beef broth


    *Preparation:
    Combine roast beef, dry dressing mix, pepperoncini and beef broth in a large pot or slow cooker. Cook over medium-high heat until hot, 15 to 20 minutes.

    Crockpot Italian Beef Recipe

    INGREDIENTS:
    3 1/2 to 4 pounds beef roast, sirloin tip or rump roast
    12 ounces (jar) Italian Giardiniera, drained, less if you want it less spicy
    12 ounces (jar) pepperoncini peppers
    1 envelope Italian salad dressing (zesty Italian)
    10 ounce can condensed beef broth

    PREPARATION:
    Place beef roast in a 3 1/2 to 5-quart slow cooker. Combine Giardiniera, pepperoncini peppers, dry salad dressing mix, and condensed beef broth.

    Add all mixture to crockpot. Cover and cook on LOW for 12 to 14 hours, until meat is very tender. Use a fork to shred for sandwiches and serve with crusty Italian rolls or crusty bread. Serves 10 to 15.

    This is my slightly different version that we just love:

    ITALIAN BEEF SANDWICHES

    3-4 lb. beef roast (I like chuck but rump, Boston are good)

    12 garlic cloves


    1 packet au jus seasoning
    1 packet Good Seasons Italian dressing (Zesty gives more flavor)
    1 small jar pepperocini peppers


    Make pockets in roast and insert garlic cloves. Season with cracked black pepper. Place in crockpot. Mix remaining ingredients together, including juices from peppers and add to crockpot. Cook all night at 200 or in crock pot. Chill to skim off fat. Depending on texture of meat, slice very thinly or pull into shreds with fork. Slice bread horizontally. Cut into sandwich servings. Reheat meat in juices and serve on buns. Be sure to serve bowls of the juice for dipping.

    Marge: Do you add additional liquid - besides from the peppers?

    I don't add any juices. The slow cooking allows juices to seep from beef.
