    Default Need Recipe for Overnight Breakfast dish

    Hi! I am looking for a recipe called Breakfast the Night Before. From what I can remember it has LF Jimmy Dean sausage, FF cheese, egg beaters and cream of mushroom soup but I can't remember where I saw it! Does anyone have it?

    I did a google and found the full fat version, but you could easily sub the lower fat ingredients.

    I"m giggling. I thought the name "breakfast the night before" looked familiar. I peeked at my Mastercook files and found the light version! I don't know where i got it from tho. Here it is!

    Breakfast The Night Before - 5 Points
    Recipe By :
    Serving Size : 8 Preparation Time :0:00
    Categories : Casserole Eggs
    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    10 1/2 ounces Jimmy Dean 97% ff sausage -- (one roll)
    8 slices bread -- cubed
    2 cups fat-free cheddar cheese -- grated
    1 cup egg beaters® 99% egg substitute
    2 1/2 cups skim milk
    3/4 teaspoon dry mustard
    10 3/4 ounces cream of mushroom soup -- condensed -- (one can)
    1/2 cup skim milk

    Cook sausage in large skillet until brown, breaking up with wooden spoon; drain. Pat sausage dry with paper towels.

    Grease 9x13-inch baking dish. Place bread cubes in baking dish. Sprinkle grated cheddar cheese over bread. Sprinkle sausage over cheese.

    Combine egg beaters, 2 1/2 cups milk and dry mustard in medium bowl; beat with rotary beater or fork until well mixed. Pour egg mixture over layered mixture in baking dish. Cover with plastic wrap.

    Refrigerate for 8 to 24 hours.
    Heat oven to 300 degrees F.
    Stir together cream of mushroom soup and 1/2 cup milk in small bowl. Pour over mixture in baking dish. Place baking dish on baking sheet.
    Bake, uncovered, about 1 1/2 hours or until center is set when baking dish is slightly jiggled. Let stand for 10 minutes before serving.
    Per Serving (excluding unknown items): 243 Calories; 5g Fat (20.6% calories from fat); 23g Protein; 21g Carbohydrate; 1g Dietary Fiber; 25mg Cholesterol; 1028mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat;
    1/2 Non-Fat Milk; 1 Fat.

    I'm definitely saving this one. This would've been PERFECT for my team meeting breakfast this coming Tuesday, but I already signed up to bring something else. I'm sure it'll come in handy sometime soon though. Thanks!

    Does anyone know if the can of cream of mushroom should be the healthy choice lower fat varieties, or should it be full fat?

    I don't know for certain, but I would use the 98% fat free kind. I use the reduced fat verstion anytime I make a recipe that calls for "cream of" soup. HTH

    I'm making this this morning and letting it set for tomorrow morning. I grew up on the fullfat recipe of this every year, so it was great to see a reduced fat and calories version. couldn't find the 97% jimmy deans, but at least got the egg beaters, skim milk, lf cheese, and lf bread, that's a good adjustment I think!

    I made it and put it in the basement fridge, my dad woke up early and wanted to help out by throwing it in the oven, however, he didn't know I still needed to put the cream of mushroom soup on it, but it was great without it! Saved us at point or two i'm sure!
