    I just started to get creative with Eggbeaters and try some new recipes. Here is one I came up with today and loved!

    Cut one whole in each center of two slices of light bread. Spray a big frying pan with Pam. Turn heat up to medium. Put the bread in the frying pan, and pour 1/4 cup eggbeaters into each hole. Let it overflow a little onto the sides. Cook a few minutes until egg it set on the bottom. Flip, and cook until set. You may need to flip it a few more times to get both sides of the bread golden, or maybe toast the bread before you put it in the pan.

    I sprinkled some italian seasoning, garlic powder, and salt on mine while they were cooking and served with ketchup. Each piece is 1 pt.

    Sounds good Aileen. Isn't there a name for that? Like "Toad in the hole" or something like that. Or am I just imagining?

    I thought that was it, but after I wrote it down I thought, that sounds silly. Maybe I'm thinking of something else. Glad to hear I'm not totally losing it.
