    Talking Pineapple Casserole

    20 Ounce can cruched pineapple, do not drain
    3 eggs beaten
    2 Tablespoons flour
    1/2 cup sugar, blended with flour
    2 slices bread, cubed
    3/4 stick margerina, melted

    Beat eggs in casserole. Add pineapple, flour and sugar. Blend well until sugar is dissolved. Place cubed braed over the top. Spoon melted margerine over the top and bake 45 minutes at 350 degrees. If you are going to double the recipe, it is better to make two seperate dishes because just one large dish would be soupy.

    Substitutions...Egg beaters or egg whites for eggs, reduced fat or fat free ICBINB for margarine, and splenda for sugar...I haven't calculated values on this, but I'm sure you could ENJOY WITHOUT GUILT!!! Let me know if you get POINTS for this??

    It sounds good. I will give it a try when I come back home after the holidays. I will try it with egg beaters, and splenda.

    Here is something I make up that is really good.

    1 box of Angel Food cake mix
    1 can of crushed pineapple (not the small cans) I think it is the 15 oz cans.

    Heat the oven like the cake mix says I think it is 350 degrees.

    In large bowl empty cake mix ,add crushed pineapple, and place in 9 x 13 pan. Place in the oven for about 30 minutes. It is really good.

    Sounds yummy, I bet topped with FF Cool Whip or FF Vanilla Pudding would be delish! I'll give that a try!
