    Default Corn Muffins

    Hi buddies! These muffins are great, and 2.5 points by my calculations. I'll post the original recipe & my modifications

    Corn Bread/Muffins
    Serves 12

    Ingredients:
    1 cup all-purpose flour
    1 cup fine cornmeal
    2 teaspoons baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    1/4 cup sugar
    3/4 cup skim milk
    2 large eggs
    1/4 cup unsweetened applesauce (I was out of applesauce and subbed ricotta cheese. It worked great, but they were a little less sweet)

    Directions:
    1. Preheat oven to 425 degrees F (220 degrees C). Lightly grease an 8x8-inch baking pan.
    2. In a bowl, mix together flour, cornmeal, baking soda, baking powder, salt, and sugar. In a separate bowl, stir together milk, eggs, and applesauce. Fold the wet mixture into the dry; mix together well. Then pour the combined mixture into baking pan.
    3. Bake in the preheated oven until puffed and brown, about 15 to 20 minutes. (Mine cooked in 12-13).

    How do you think these would be made with Splenda and Egg Substitute?

    I try not to use artificial sweetners/products, for the most part, so I don't really know. From what I understand, Splenda subs for sugar, 1 to 1, and same with eggs. It would probably bring the points to 2/muffin.

    When I put this into etools and changed to Splenda and eggwhites, it came up to 2pts for 8 servings. Not bad, if you ask me! Kait, I gave it my name due to changes and so I could find it again! :lol: The old memory ain't what it use to be! Thanks for the post! This will come in handy to go with the blackeyed peas, tomorrow!

    Side Dishes | Ingredients
