    Default Meatball Stew - 5 Points

    I made this for dinner tonight. I doubled the recipe. Substituted egg beaters for the whole egg, and used only 1 cup bread crumbs and the second cup of oatmeal. Added mint and cinnamon to the meatball mixture and omitted the thyme. This should give it a more greek/mediterranean flavor. Will do reviews later.

    Edited: Just ran the modifications above thru MasterCook. Used 92% lean ground beef (Had to enter this in MC). When i made this doubled ... came out to 48 meatballs - 12 servings is 4 meatballs per serving. (210 - 6 - 2) for 4.3 points. 8 servings (315-10-4) 6 meatballs and yields 6.3 points. I'll use the 6 meatballs for 6 points and use some of the whole wheat pasta i have. Reviews later!



    Meatball Stew - 5 Points
    Fix it and Forget it - Lightly
    Serves 6

    1 pound extra lean ground beef
    1 whole egg
    1 cup bread crumbs
    1 medium onion, chopped
    3/4 teaspoon salt
    10 1/2 ounces fat free beef broth
    14 1/2 ounces tomatoes with garlic & onion, diced
    1/4 teaspoon thyme
    3 whole carrots, diced
    1 medium onion, chopped
    1 stalk celery, chopped


    1. Combine ground beef, egg, bread crumbs, onion and salt.
    2. Shape into very small meatballs
    3. Brown meatballs in nonstick skillet.
    4. Mix remaining ingredients in slow cooker. Spoon in meatballs and stir together gently.
    5. Cover. Cook on high 3 - 4 hours.
    6. Serve over potatoes or spaghetti.
    7. Per Serving: 240 calories, 6 g total fat; 2.5 g saturated fat; 45 mg cholesterol, 3 grams fiber.

    Original recipe as i posted in the first post called for 6 servings.

    Meatball Stew - Modified - 6.3 Points (Per MasterCook)
    8 servings (315 calories -10 fat -4 fiber) 6 meatballs and yields 6.3 points

    2 pounds 92% Lean Ground Beef
    1/2 cup Egg Beaters® 99% egg substitute
    1 cup bread crumbs
    1 cup oatmeal
    1/2 teaspoon mint
    1/4 teaspoon cinnamon
    1 medium onion, chopped
    3/4 teaspoon salt
    10 1/2 ounces lowfat beef broth
    29 ounces tomatoes with garlic & onion, diced
    3 whole carrots, diced
    1 medium onion, chopped
    2 stalks celery, chopped

    Thumbs up Review Meatball Stew

    I had 8 meatballs of the modified version (6 points) along with some whole wheat pasta (3 points). i am stuffed!

    It was SO yummy.
    This is my first ever crockpot recipe.
    The meatballs were so incredibly tender.
    I should have cut my carrots a little smaller, they weren't totally tender, but had just a bit of a crunch to them.

    Doubling the recipe was good for our family of 5 .... tho i could have probably gotten away with doing just one batch of it. But this way we have some left overs for tomorrow's dinner, or MB sandwiches.

    I was SO surprised that when i used that 92% FF meat, that there was almost NO fat in the pan when i fried them! I was worried that the absence of fat, would mean that the MB would be dry, but that wasn't the case at all. They were very moist.

    I remember thinking, is there REALLY a difference between the "regular" ground meat and the higher priced low fat meat? If i drain it, isn't it all the same? Well .. after finally using some of that premium meat, i know that there is a difference!

    This recipe gets two thumbs up!

    A delicious recipe!!!! The meatballs were so tender and good. My DH loved it as well! Plus I have a few lunches from the leftovers! Thanks for a great recipe!

    I ended up making it on stove top ... still simmered the 3 - 4 hours ... i think it's all the oatmeal that makes the meatballs so tender .. it must soak up all the juice and just make them moist! Added some sliced red, green, and yellow peppers to the mix as well ... everyone loved it!

    I made this last week- Was fantastic. Also, it makes so much that I froze individual containers for a quick grab & go lunch.
