Ingredients:
20
oz. mixture of various dry beans*
1 chopped celery stalk
Water
1 clove garlic or 1/8 teaspoon garlic powder
1 potato peeled and cut into chunks
Salt (optional)
1 medium chopped onion
Pepper (optional)
1 carrot diced
Instructions:
Rinse
beans and remove any debris. Put beans into
a large pot and cover beans with 2 inches of water.
Bring beans and water to a boil. Remove
beans from heat and let stand for 1 hour.
You may discard soaking water with fresh water.
After 1 hour, add potato, onion, celery, carrot,
and garlic. Add additional water, if necessary.
Reheat bean mixture, stirring occasionally.
Add more water if desired. Garnish with
non-fat sour cream and chives. Serves
approx. 12 (1 cup) depending on how much water
is added.
*Use
a combination of beans such as 15 bean soup mix
(discard seasoning packet), kidney, Northern,
pinto, split peas, lentils, navy, cranberry, black,
lima).
