Mango-Avocado Soup

Ingredients:

  • 1 Haas avocado - peeled and seeded - cut in chunks
  • 1 mango - peeled and seeded - cut in chunks
  • 1 cup apple juice - prepared from frozen concentrate
  • 1/2 cup water
  • 1 cup nonfat plain yogurt
  • 2 Tbs. fresh lemon juice

Instructions:

In a blender, process all ingredients till combined but still slightly chunky.

Chill and serve, garnished with chopped chives or green onion tops.
