c Cooked brown rice
1 Can black beans, drained and rinsed
2 c Frozen corn kernels
1 Red bell pepper, chopped
1 Small onion, chopped
1/4 c Light vinegar
1/4 c Chopped cilantro leaves
1 Minced jalapeno pepper, or cayenne to taste
1 t. Chili powder
Instructions:
Combine all ingredients. Tastes even better if
you let it stand for at least one hour before
serving.
