Ingredients:

1/2 pounds white potatoes, peeled and quartered
1 cup non-fat sour cream
1 cup skim milk
Salt and pepper to taste
Instructions:
Boil
the potatoes in water until tender. Drain. Add
sour cream, milk, salt and pepper. Beat to desired
consistency. Add more sour cream and milk as needed.
Variations:
While beating, add one of these seasonings (increase
as desired):

5 roasted, peeled garlic cloves

1 Tbsp. prepared horseradish

1/4 cup chopped green onions
-
4.5-ounce can mild peeled and chopped green chilies,
drained
Yield:
Makes 6-8 servings.
