Ingredients:
1
lb. potatoes, peeled and cut into thin wedges
1 Tbs. plus 1 tsp. olive oil
2 cloves garlic, crushed
1 tsp. rosemary, chopped
1 tsp. parsley, chopped
1/4 tsp. mustard
2 tsp. lemon juice
1 Tbs. plus 1 tsp. unsalted butter, melted
Instructions:
Preheat
oven to 375°F.
Place potatoes on greased oven trays. Bake
about 30 minutes or until just tender. Turn
on broiler. Combine next 6 ingredients in a bowl.
Stir into potatoes and toss until potatoes are
well coated with mixture. Brush with butter. Place
potatoes 4-5 inches from heat source and broil
another 8-10 minutes, stirring occasionally
until browned and tender. Season with salt to
taste and serve.
