Grilled Potatoes with Garlic


  • 1 lb. potatoes - peeled and cut into thin wedges,1 Tbs. plus 1 tsp. olive oil,2 cloves garlic - crushed,1 tsp. rosemary - chopped,1 tsp. parsley - chopped,1/4 tsp. mustard,2 tsp. lemon juice,1 Tbs. plus 1 tsp. unsalted butter - melted


Preheat oven to 375°F.

Place potatoes on greased oven trays. Bake about 30 minutes or until just tender.

Turn on broiler.

Combine next 6 ingredients in a bowl. Stir into potatoes and toss until potatoes are well coated with mixture.

Brush with butter. Place potatoes 4-5 inches from heat source and broil another 8-10 minutes, stirring occasionally until browned and tender.

Season with salt to taste and serve.
