Chicken & Mango Salad

 

4 POINTS
per serving


 

Ingredients:

2 tsp minced garlic
1 tsp minced ginger
4 tbsp mango chutney
3 cups cabbage, thinly sliced
3 cups cooked noodles ( thin Asian ones)
cooked chicken breast, cooked & chopped
1 - 2 mangos, sliced
juice of 1 lemon
1 tbsp fresh basil, chopped


Instructions:

Stir fry garlic, ginger & mango chutney over high heat for 10 seconds. Add cabbage & stir fry a further 1 -2 minutes until tender.

Add noodles, chicken, mangos, lemon juice & basil. Cook for 1 min or until heated through. 

Yield: 6 servings
