Chicken Mango Salad

Ingredients:

  • 2 tsp minced garlic
  • 1 tsp minced ginger
  • 4 tbsp mango chutney
  • 3 cups cabbage - thinly sliced
  • 3 cups cooked thin Asian noodles
  • cooked chicken breast - cooked & chopped
  • 1 - 2 mangos - sliced
  • juice of 1 lemon
  • 1 tbsp fresh basil - chopped

Instructions:

Stir fry garlic, ginger & mango chutney over high heat for 10 seconds. Add cabbage & stir fry a further 1 -2 minutes until tender.

Add noodles, chicken, mangos, lemon juice & basil. Cook for 1 min or until heated through.
