Ingredients:
1/3
cup cocoa powder
1/3 cup hot water
5 1/4 oz (150g) dark chocolate, melted
5 1/4 oz (150g) light butter, melted
1 1/4 cups brown sugar
3 1/2 oz (100g) ground almonds
4 eggs, separated
2 tbsp powdered sugar, sifted
Instructions:
Preheat
oven to 325ºF (160ºC). Coat an 8-inch (20cm) square
cake pan with cooking spray.
In
a large bowl combine the cocoa and water. Stir
until smooth. Add the chocolate, butter, sugar
and almonds. Stir in the egg yolks one at a time.
Beat
the egg whites with an electric mixer until soft
peaks form. Gently fold the egg whites into the
chocolate mixture.
Pour
the batter into the prepared pan and bake for
about 1 hour 15 minutes or until firm. Remove
the cake from the pan and dust with the powdered
sugar. Cut into 12 pieces to serve.
