I'm not sure where I got this - could've been here, but I just made it this week and OMG is it gooooood!!!! (and easy)
CAULIFLOWER SOUP
0 points per serving - 6 servings
6 cups water
2 cups sliced carrots
2 T. chopped parsley
4 cups cauliflower - chopped
1/2 cup chopped onions
4 chicken bouillon cubes
salt and pepper to taste
In a 5 quart saucepan, add all ingredients. Cover and simmer until vegetables are tender (about 20 minutes.)
Remove vegetables, place in blender (or food processer) and puree. Put pureed vegetables back in the liquid and reheat.
That's all there is to it, but it is delicious!! [img]graemlins/wave.gif[/img] If you eat more than the 1-cup size serving I guess you'd have to count the carrots for maybe 1/2 or 1 point, depending on how much you have. But with a 1-cup serving it is 0 points!!
