    Hi Buddies,

    This may be posted here somewhere, but I wanted to share it anyway. I tried this tonight, and it was outstanding! My kids loved it, too. It would be great on a reduced-calorie graham crust, also (for some extra points). No one would know it was Core!

    Crustless Strawberry Pie (Core)

    4 cups sliced strawberries
    1 small box sugar-free Cook & Serve (NOT INSTANT) vanilla pudding
    1 small box sugar-free strawberry-flavored gelatin
    2 cups water

    Spray an 8" or 9" pie plate with nonstick cooking spray. Scatter strawberries evenly across bottom. Cook vanilla pudding according to directions, but use 2 cups of water, instead of milk. Add dry gelatin to pudding mixture, and stir until dissolved. Allow to cool 5 minutes, then pour over strawberries. Chill 4 hours.

    This is a wonderful pie recipe. I got one piece and DH finished it off . I think it will great to experiment with different fruits and jello's this summer. Thanks for a great recipe.

    Cynthia.....I ran this through MasterCook and it came to only 1 point per serving and is wonderful! (That is without the cool whip, adjust points accordingly).

    Made this today and it was delicious! I can't believe it is core!
    I wake up every day with the realization that this is it, that there's only one shot at this life and I can either enjoy the ride and live it to its fullest and to my highest potential or I can stay the way I am.

    Is there a reason to use water instead of milk? I mean if you use FF milk that is core but would the consistency be the same?

    I make this recipe for family dinners at my mom's in the summer and it is always a favorite. I make one as is for me and my mom who is also on core, and then 2 in the graham cracker crust for everyone else becuse they insist it isn't a pie without a crust, lol.
    I also tried it one of the core crusts made with oatmeal and it wasn't too bad.

    I made this "as is" for our neighborhood cookout....everyone RAVED over it. I think without the milk it seems to be sort of like a congealed salad. Not sure what would happen if you added milk instead of water. My kids even liked it!

    This was delicious! My boyfriend ate most of it. For less than a point (I think) I topped it with a little coolwhip free and sprinkled cinnamon on top. Definitely will have to make this again.

    I couldn't find the sugar free cook and serve pudding at my grocery for some reason so I bought instant instead. I made it according to the regular directions and after the pudding was set a little I mixed in the jello. I poured it over a heap of strawberries and it was really good. Thanks again Christine for the super tasty recipe.

    I've doubled the recipe and put it in a 13x9 pan for gatherings. I've never met anyone who didn't love it.

    As for the question about using water instead of milk, I'm wondering if the water was used to save pts. Now that I'm on Core, I will try it with milk.

    Our leader showed this recipe at our meeting on Friday.
    She said you can use a variety of combinations of fruit and jello, such as mandarin oranges and orange jello. She said it tasted like a dream sicle.
    Peaches + peach jello-I bet that would be yumm-O.

    I have a question tho.
    I thought to be CORE the pudding and jello had to be sf/ff not just sf. I couldnt' find the cook n serve in sf/ff.
    Am I wrong on this?

    I made some today, using the sf/ff instant kind with skim milk but I just layered it in a bowl whenever I wanted some. It's really good.

    I made this yesterday for desert. It was awesome. I did put it into a reduced fat, grahmcracker crust, counted the points for the crust. Will definately make again, (Like tonight)

    You can make this a cherry pie, by using a can of tart cherries. Use the juice to replace some the water in the recipe. Add alittle splenda to help with the tart cherries. This is also good. My mom has been making this cherry pie for 3-4 yrs.

    This was GREAT!!! I could not find the cook and serve FF vanilla so I used instant, used ff soy MILK instead of water. I took 2 cups of FF soy milk, beat the FF vanilla pudding into it, and then after it seemed to be thickened, I added the SF jello. Then I poured it over the strawberries and refridgerated it. EVERYONE loved it!!

    This is a KEEPER!
