desserts | Make your coffee break more pleasurable with a beignet (BEN-yeah), the sugar-dusted biscuits of New Orleans’ French Market. This baked version has a delicious and crisp cinnamon-sugar shell.
1 1/2 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1/4 cup sugar, divided
4 oz unsweetened applesauce
1/2 cup fat-free sour cream
1 Tbsp margarine, melted
1 tsp vinegar, cider
1/4 tsp ground cinnamon
Preheat oven to 400°F.
In a medium-size bowl, stir together flour, baking powder, baking soda, salt and two tablespoons of sugar.
In a small bowl, stir together applesauce, sour cream, margarine and vinegar. Stir applesauce mixture into flour mixture. Knead briefly, just until dough comes together. It may be sticky. Turn out onto lightly floured board.
Pat into an 8-inch square, 1/4-inch thick. Cut into 16 squares. On a plate, combine remaining sugar and cinnamon. Lightly dip beignets into cinnamon-sugar on both sides.
Place on a cookie sheet coated with cooking spray. Bake 13 to 15 minutes or until golden brown. Yields one per serving.

I'm planning on making a batch of these for Easter, either for breakfast or part of dessert as I'm having company and it might be a nice treat. Hopefully they'll turn out. :D

I whipped up a batch of these this morning, and they are both easy to make and tasty! They're not overly sweet, which is good- the cinnamon sugar adds the right amount of sweetness. Adding raisins, or orange/lemon zest might be good for the next time, but at 1.4 points for 1 I think the zest is the better option. :D The best thing is that they are made with ingredients I keep on hand, so no rushing out to buy stuff I normally don't need.
Definitly a keeper!!

Hi! I made my 3rd batch of these wonderful little things (my husband *loves* them), and this time I made it a chocolate version.
I subsituted 2 tbs cocoa powder for 2 tbs flour, but I think maybe 1 tbs might be enough next time; and I added 1/2 tsp vanilla extract. My husband likes the original better, but these were good too. I used lemon oil in my second batch, also really nice!

Was just wondering if you can make these with a splenda/cinnamon coating rather than the sugar? I have an idea that I have made biscuits with splenda on the top but can't really recall - any idea???

Hi Ally! Long time, no read! :D
I'm sure you can use splenda instead of sugar! I just like sugar. :D I find, for me, that splenda in large doses can have an acrid taste, so I don't use it for stuff like this.
I made these again last night for a quick "second dessert" for my family (I can make these in my sleep now!) and I threw in about 2 tsp cinnamon into the flour mixture- YUM!!!

Cinnamon and splenda together are ok but splenda alone if you add alot has a bitter taste to me. I added the cinnamom not only cause of the splenda but I love cinnamon. I eat the churros first sunday of the month I count it as 4pt but I split witht he 3 boys. Now to make that low pts it would be a staple at my house.

I made these recently, threw in 1/4 cup mini chocolate chips and a tsp vanilla, and for 1.8 points they were great.
