I would love to make these for a holiday party I am having, but I want to make sure they are good before I make them!<br />
<br />
2 1/4 cup(s) all-purpose flour   <br />
1 tsp table salt   <br />
1 tsp baking soda   <br />
2 Tbsp unsweetened cocoa   <br />
1 1/4 cup(s) buttermilk   <br />
1 tsp white vinegar   <br />
2 tsp vanilla extract, divided   <br />
3/4 cup(s) sugar, granulated   <br />
1/4 cup(s) light butter, softened   <br />
2 large egg(s)   <br />
1 cup(s) powdered sugar   <br />
2 Tbsp Neufchatel cheese, softened   <br />
Instructions<br />
Preheat oven to 350ºF. Prepare 16 muffin tins with paper muffin liners.<br />
<br />
In a large bowl, mix together flour, salt, baking soda and cocoa; set aside.<br />
<br />
In another large bowl, mix together buttermilk, vinegar and 1 teaspoon of vanilla extract; set aside. <br />
<br />
With an electric mixer on high speed, cream granulated sugar with butter until light and fluffy. Reduce mixer speed and add eggs, one at a time, until well-incorporated.<br />
<br />
Add about 1/3 each of flour and buttermilk mixtures to sugar mixture; beat until just combined. Repeat until all of flour and buttermilk mixtures are incorporated; add 1 1/2 ounces of red food coloring and mix well with mixer (do not over beat batter).<br />
<br />
Fill each muffin tin about 2/3 full with batter. <br />
<br />
Bake until a toothpick inserted in center of a cupcake comes out dry, about 25 minutes; cool for 5 minutes in pan and then cool completely on a wire rack.<br />
<br />
Meanwhile, to make icing, combine powdered sugar, cheese and remaining teaspoon of vanilla in a medium bowl. Beat with an electric mixer until well-combined and creamy. For a looser icing, add 1 to 2 teaspoons of warm water. Ice cooled cupcakes. Yields 1 iced cupcake per serving.</div>

We are not going anywhere for Thanksgiving so eating should not be too much of an obstacle, as I will have full control of the menu lol.<br />

			<content:encoded><![CDATA[<div>Mornin' buddies :wave:  Must be Frantic Friday at Susan's...LOL(oops, not really funny is it)  The sun has finally made it all the way out this a.m.  We had light rain off &amp; on all day yesterday and then last night we had torrential rain.  Was glad we were IN and not out.  Was mild all day tho and it's mid 50s now so I'm guessing more of the same today.  Hope so anyway since my sister called for a workday at Mama's today.  My sis is now off every other Friday &amp; today's she's off so said there was work that needed to be done at Mama's.  So DH did not go to church today.  I told him it was ok with me if he went but I didn't think my sister would understand or appreciate it.  And she does work very hard both at work &amp; at home/mama's so I hate not to help.  DH joined us for lunch at the VIPs yesterday.  The program was &quot;The Dancing Grannies&quot;.  They've been before and are very enjoyable.  This was their Christmas program.  Minimum age is 62 and the oldest member is 87!  Most are 70 or older.  I'd love to do something like that but I don't have a dancing bone in my body...lol  Anyway, we enjoyed that.  Afterwards DH went back to work till about 4.  I chatted with my preschool dept boss for a bit before going home(thankfully mama found a bench to sit &amp; wait)  DD called yesterday afternoon so we got the scoop on GS's &quot;prize&quot;.  Think I filled y'all in on that last night.  I texted him last night &amp; asked if he was still flying high &amp; he said yeah.:bcb_bigsm  I think older brother might be feelin' the heat even tho I think he'll find it much harder to kill a deer than his brother, even tho he probably wouldn't admit that.  Today is yard work, lunch with Mama after she gets her hair fixed and that's about it as far as plans.  Bill Gaither comes on tonight at 8 on Hallmark if any of you like Southern Gospel quartet music:bcb_happy  I just told dh to help me remember...  Oh...I lost 3 lbs this week!  Finally the scales moved again.(first time in Nov I think)<br />

<b>Susan</b>, I'm so excited for you that both your older kids come home tonight!  How nice that they get a whole week.  I'm looking forward to DS &amp; DIL coming home but also realize I have to &quot;share&quot; them so not sure how much we'll see them but some is better than none!  Hope the kidlets are good for you today.  Are you able to be outside?  It's really nice here tho probably a mite wet.<br />

His didn't either when he hit that one with the van a couple yrs ago.  I know how your GD feels tho...I hate to see them hurt...or worse.  So glad the kids were ok tho! It's New Moon Day! My buddy and I are going to the interval class at the gym, then showers and over to her place to finish up watching Twilight. We didn't get everything done yesterday afternoon and had to turn the movie off early! I'll get back from the movie around the same time as the kids off the bus. I believe DH might get in from the airport around the same time, but he has to pack and leave right away for the last of his leader training weekends this year. He'll be done late Sunday night. <br />
