try the new eggplant recipes in tis month's issue of ww magazine I made the eggplant parm and it was delish !!!

I haven't tried that particular recipe but I do have a healthy and low calorie version that I have made for years. It is SO GOOD! Italian but low calorie. In fact I make it whenever I invite vegetarians over for dinner. Yumm! I think I will make it again, maybe next week.

I made up an eggplant recipe that I love. It has chicken sausage in it but you could easily use a soy based product (not a breakfast sausage, though..) or just add some herbs and spices..
I posted it with the name chicken andouille sausage eggplant rolls (http://www.healthdiscovery.net/forums/showthread.php?t=87017&highlight=andouille)(or something like that!)

I have a recipe that I just love! Its really simple... tomato sauce (2 of the small cans), 1 can of diced tomatoes, garlic, and your favorite spices...once it simmers you add eggplant and cook until soft and tender. I LOVE IT!
Another one that i did for a while was eggplant, seasoned and dipped in eggs and then bread crumbs (if you choose, I sometimes skipped the breadcrumbs) and then I let it cook for a while, when it was almost done I topped it with Canadian bacon and added FF cheese...YUM YUM YUM! I had to give this one up because I could not limit myself!
Traders Joes has an eggplant mix that is already prepared and pretty tasty:exercise2
