I am starting Core on Saturday and I need some help. I'm going to buy some couscous, but not sure how I use it or what it can be used for. Are there things that it can be used in place of? I want to be able to incorporate different things in my menus and need suggestions. Thanks! :)

I only have used it as a side dish with dinner. I put some fresh sauteed mushrooms in it the other night. It's kind of like rice but a lot softer and smaller. (I guess it is actually wheat pasta.) The great thing is that it is so quick to cook unlike rice.

Right...! Couscous is Fast Food! ;) :)

Put 2/3rds a cup of couscous into one cup of just-boiled water/or broth. Let sit for 3 minutes. Voila! Done. (At that point I usually microwave it on "high" just to heat it through and through.)

I just cooked some frozen stir-fry vegetables in the microwave. I added some chopped grilled turkey. I added some previously made Tofu Alfredo Sauce. And then added some couscous (made with a couple of TBS. of Lipton's Onion Soup Mix...which is good, by the way!). That's my dinner! :D

I'll add some more ideas tomorrow~

Tofu Alfredo Sauce. That's a new one. Where can I find the recipe?

You are just rehydrating cous cous when you cook it so it is fast. I use it as a replacement for rice, pasta or other grains ( even though technically it is very small pasta), and eat it with veggies and chicken. I use it as a breakfast cereal and have it with yogurt and fruit. It is so versatile.

Thanks for all the ideas, ladies. I ate couscous for the first time tonight..did not care for it until added a small amount of Lipton's Dry onion soup mix..then it was yummy!! Next time I will cook it in the soup mix.

DH is Moroccan so we have couscous galore around here. :D Make sure you get the instant one and season the water. DH like tumeric in it. You can also make a salad. Chop up whatever veggies you like (peppers, onions, carrots and olives are what I use) and dress it with a lemon and olive oil dressing.

For breakfast, make it with milk and cinnamon instead of water and salt. YUMMY!!

Either near the rice/beans OR I find mine in bulk bins (whole wheat couscous, even) at the local food co-op~ :)
