i've been off core and back to flex for so long that i can't remember if all the spices and beans are core. i've made this and it TRULY lives up to it's name (only used 1 jalepeno pepper though and made it in the crock pot - 3 hours on low, 1 hour on high).
The Best Vegetarian Chili in the World
Break out your soup pot and fix up a batch of this
delicious, spicy vegetarian chili today! It's ready in no time,
and packed with vegetables, beans - and flavor! Prep Time:
approx. 15 Minutes. Cook Time: approx. 1 Hour . Ready in:
approx. 1 Hour 15 Minutes. Makes 8 servings.

1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped
green chile peppers, drained
2 (12 ounce) packages
vegetarian burger crumbles
3 large tomatoes, crushed
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans
1 (15 ounce) can garbanzo beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn
Directions
1 Heat the olive oil in a large pot over medium heat.
Stir in the onion, and season with bay leaves, cumin,
oregano, and salt. Cook and stir until onion is tender, then
mix in the celery, green bell peppers, jalapeno peppers,
garlic, and green chile peppers. When vegetables are heated
through, mix in the vegetarian burger crumbles. Reduce heat to
low, cover pot, and simmer 5 minutes.
2 Mix the tomatoes into the pot. Season chili with chili
powder and pepper. Stir in the kidney beans, garbanzo beans,
and black beans. Bring to a boil, reduce heat to low, and
simmer 45 minutes. Stir in the corn, and continue cooking 5
minutes before serving.

oh great!! thank you so much.........but be warned, it makes about 5 TONS!!! :) i ate it for lunch and dinner for over a week and i still ended up throwing a ton out. but, it was just for me, if you have a family i'm sure you won't have any left over. it's REALLY great. you could always halve it if you choose. i think i'll post it on the core recipe thread. thanks again for your help!

Gee, Ginakathryn...Seems like you could have frozen it in lunch-sized portions!
I am so happy to find those things in the freezer on days when I just don't want to cook...! :D :bcbsalute

My leader this past week said the VEGGIE CRUMBLES ARE NOT CORE......but I would say that if you took a Veggie Burger, which is core, and crumbled it, you could add it to your soup. Not sure the difference, but this is what she said. :)

The 2005 Complete Food Companion says this is Core:

Jill...I just saw your answer. I think mistakes are made when leaders don't look at the UPDATE on the Complete Food Companion. A lot of mistakes were made~
I don't think all leaders do on-line~ And then there's human error. :rolleyes:

If you go to meetings can you get this update for free? I just assumed that all veggie "meat" products were Core even though I do not use them too much.

could you give me a quick run down on how to freeze chili?? i've never frozen food that i've made, just store bought stuff that already comes in the freezer section. :help: what would you freeze it in? just regular tupperware?? and much per portion?? and then how should you defrost it?? slowly in the fridge or in the micro?? this is all so new to me! i've been a fast food gal for so long. :crazy:

I use the new Gladware freezer containers, but use whatever freezer containers you have! Regular Tupperware would be fine. On the portions, it depends on the food and how much I would normally eat, but I usually do "1 cup" portions.
You can put the frozen entree into the fridge the night before you'll use it. Sometimes I let it sit on the counter awhile before "defrosting" it in the microwave, and then "heating" it in the micro. I just pop the little frozen entree out of it's container and into a heat-proof bowl. (I use Pyrex glass bowls with Stretch-Tite wrap on top).
Gee, GK...You're gonna' love eating your own frozen foods! Instead of getting tired of eating the same thing over and over again, this gives you LOTS of delicious variety! :D :bcbsalute

A while ago I got rid of all my mismatched miscellaneous containers, and bought 10 identical ones at the dollar store. I bought the 22 oz rectangular size. They go from freezer to microwave. (Check the bottom - it will say if they are microwaveable. Loosen the lid before microwaving.) They take up very little room in the cupboard, freezer or fridge since they stack so nicely. They are translucent so we can see what is in them, and leftovers are more likely to be eaten. For $10, they sure made my life a lot simpler!

I freeze lots of cooked things either in containers, ziplock bags or that new sticky clear wrap, depending what it is. I need things to grab when I don't have time to cook.
