View Full Version : Core and vegetarian?

I am not completly vegetarian, but about 90%, and rarely cook meat at home, although I do use the frozen pre cooked chicken strips.

Is there anyone else that is (almost) veggie? Even if not we could post some Core vegetarian recipes for people to try. I tend to get in a slow cooker slump of canned tomato, grains and beans dumped in together and wind up with a nourishing, if sort of sad looking, mush :embarrass.

Although I am not a vegeterian, I having been eating a ton of fruits and veggies on Core. My favorite is to roast veggies (I use whatever I have on hand) spritzed with a little olive oil and a generous shake of Mrs. Dash in a 400 degree oven for about half an hours. I put the veggies over couscous or quinoa and sometimes add beans or leftover fish or chicken. It is wonderful. I have been eating pudding parfaits made with sf ff puddiing and fruit. Sometimes I flavor the pudding with DaVinici syrup. Also very good and filling. I also make baked oatmeal just about every week and use it as an afternoon treat with a cup of coffee. :)

Baked oatmeal! Aha! I had forgotten about that recipe. You know how you go in phases eating the same thing over and over? I did a baked oatmeal phase in January and then forgot about it. Time to haul out the cookbook again :) and find some old favorites that are Core.

I like the roasted veggie idea. I love vegetables and couscous and it is something I could eat in the car ( I have to eat on the road 3 days a week). Have you tried oat groats yet? Oats before they are cut up and pressed for oatmeal? Very good, chewy and cook like rice.

Hi, Sodacracker. We do eat meat, but rarely. It's like a "condiment" at my house! ;) :D

Post your recipes! I think lots of the Super Healthy Eater recipes could easily be Core, along with the Veggie Lovers AND the Vegetarian recipes.

Have you tried the Roasted Chickpeas? They would be great on the road. Either to pop in your mouth, when you're hungry, OR to put on top of salads or other dishes.

If you like oat groats (and I do!) I bet you'd like spelt. Have you tried it? It came before wheat berries, and I actually like the taste better~

I bought some chickpeas to try that recipe out but then added them to my veggie soup. So many recipes, so little time!
