I bought a box of Gelatin today because I was thinking of trying to create a version of the Core Cheesecake (yogurt mixed with sf/ff pudding mix) that did not use the aspartame sweetened pudding mix. I have never bought plain gelatin before - any advice before I start experimenting
(and wasting yogurt :p).
Any other suggestions for gelatin?

I would think they would have great directions on the box (Knox?) for making a "gelatin-ized" dessert. Then you can just make your adaptations. By the way, GREAT idea! :D I hate aspartame and can't eat the SF FF pudding "cheesecake"...it makes my gums tingle... :confused: :p
I have been known to throw a packet in a smoothie! It makes the smoothie "thicker" AND makes it more filling AND is great for your hair and nails, too~ :)
I'll go look at my gelatin packets and see if I kept the box...it's something about using hot water or cold water to dissolve the gelatin first, I think, before making additions~

So am I right in assuming that KNOX gelatin is CORE??? What a great idea about the smoothies Carol!

well this did not work out too well. I mixed two packages gelatin with 1/4 cup cold water and added 1/4 cup boiling water and stirred. The I added the yogurt and mixed it all in with some sugar (points counted), and some cocoa powder (counted points). I left it in the fridge and it did firm up very well but there were these undissolved bits if gelatin and it really wasn't sweet enough for a dessert ( I added 3 tbsps sugar to the 3 cups of yogurt).
More experimentation next week!:)

After reading this thread.......I just want to say.....thank you to all our "Kitchen Chemists".......for their persistence in coming up with new recipes.

Do you have a little stick-blender? I wonder if that could help the gelatin "dissolve" completely?
Anyway, the ingredients sure sound good! :D (((mouth-watering)))

Good idea abotu the stick blender, I can try that next time. The two packs of gelatin made it really firm, like jello. I may try one pack, mix with blender and fructose. Although I think using cornstarch at 1 pt for a few tbsps is not a bad trade off :)

Fortunately, even though it reminds me of dessert, and I can eat 1 full cup (which is a lot!), it is so filling that overeating it is not an option for me :p
Still have to watch for that fullness factor though - it is so easy to eat right on past it sometimes.

I never even thought of adding gelatin to a smoothie. What a good idea. Keep us posted on your new recipes. I love to try new things.

Did you try completely dissolving the gelatin in the boiling water before adding the cold water? Maybe you won't get the clumps that way...Just a thought! :)

Plain gelatin dissolves best if you put it in a cup, add a tablespoon or 2 or cold water and let it sit for 5 minutes to soften. Then add your boiling water and stir like crazy. Using the mixer thingy might incorporate too much air. One envelope of plain gelatin will be equivalent to a package of Jello.
