View Full Version : Any ideas for shredded BBQ pork?

Hey all~
I'm in my first week here and on WW... I'm trying to plan next week's meals and grocery list and DF suggested BBQ pork sandwiches. I'm sure I can find low-point bread/buns, but it's the sauce and how to cook the pork that I'm not sure about. Thanks in advance!

Pork Tenderloin is only 3 points for 4oz raw. I use Stubbs BBQ Sauce (http://www.buystubbs.com/stublegbarbq.html) . It's a Texas brand so I don't know how widely available it is, but it's very low point - only 15 calories for 2 TBS. Most times I'll cook the meat in the crockpot with a bit of sauce then add more later so it doesn't get all watery. I'm sure you could simmer it as well.

Just be sure to read the labels of the sauce. There was a wide range of calories and fat last time I checked.

I found this one online - it looks yummy. I think I am going to try it!

Lowfat Texas Shredded Pork

1 large onion
1 jalapeno, minced
2 pounds pork loin, cut in 2 inch cubes
1 tablespoon chili powder
2 teaspoons cumin
1/2 teaspoon coriander
1/2 teaspoon thyme
1/2 teaspoon oregano
1/4 teaspoon cloves
Pinch allspice
3 cloves garlic, minced
2 tablespoons tomato paste
2 cups beef broth
2 cups chicken broth
2 bay leaves
1/4 cup cilantro

Cook onion and jalapeno in water until soft. Add pork and stir until brown.

Mix in chili powder and next 6 ingredients and cook 2 minutes. Add garlic and tomato paste and cook 3 minutes. Stir in all remaining ingredients except cilantro. Reduce heat, cover and simmer 1 hour.

Uncover and simmer until pork is tender and shreds easily, about 1 hour. Remove pork from liquid using slotted spoon.

Increase heat to medium and boil cooking liquid until reduced to 1/2 cups, about 35 minutes. Shred pork and mix in sauce.

Makes 10 servings.

Per Serving: Calories....173 Fat....8 g Carbs....5 g Sodium....558 mg Fiber..1g.

I've recently switched to the Carb Options brand of bbq sauce. While most bbq sauces are fat free, it's the sugar content that makes them high in points. The Carb Options is sweetened with Splenda and only 10 calories per 2 tablespoons.

I've also switched to Carb Options for my teriyaki sauce. I have another flavor, but can't think of it at the moment. I know it's low in points though.

Here is another one:

BBQ Pork

From: Fix It and Forget It Lightly Cookbook

2 lbs. boneless pork top loin
1 cup onions or to your taste
1 cup diet coke
1 cup barbeque sauce

Place pork in crock-pot. Combine all other ingredients in a bowl and then pour over pork. Cover. Cook on high 4-8 hours (mine took 8 hours) OR low 10-12 hours or until meat is very tender. You should be able to stick a fork in it and it fall apart. Shred pork. Add your favorite BBQ sauce.

Per serving 200 calories, 6 g fat, 55 mg cholesterol, 470 mg sodium, 11 g carbohydrate, 0.5 g fiber, 23 g protein, 9 g sugar

Makes 8 servings
4 oz. = 5 points
6 points with ¼ cup BBQ sauce (check bottle nutritional value and serving size)

I have one that tastes like North Carolina BBQ....


Large Pork Tenderloin
2 cup apple cidar vinegar
1tsp. red pepper flakes
4 gloves of chopped garlic
1 tbsp. splenda
salt & pepper
1 tbsp. onion powder
1 large thinly sliced onion


Spray pam in a roasting pan.... place meat in pan, surround by sliced onions...mix other ingredients together, pour over it and cook on low heat until done. (just as you usually good a tenderloin) Let cool to warm...then I chop the meat with the onions in it. Put it in a container....makes a great dish....as a sandwich or not. I make extra vinegar to pour a little over it as it sits in the refridgerator...it is very good. You can adjust the spices to your taste. I usually add granulated garlic...as we love garlic!
