Hello, I love to snack on carrots with a bit of peanut butter but some people told me that when you are trying to eat healthy carrots are not the best pick as the break down faster and turn into sugar or something like that. If anyone has any info on them id love to know:help:

If you google "glycemic index" and "glycemic load" you'll get a handle on this.

You'll find out that carrots have a high GI value. Foods with a high GI value raise blood sugar faster than foods with a low GI value.

But carrots have a higher GI value than some junk food, like ice cream I think it is - but everyone knows that eating a carrot is better for you than eating ice cream. So they came up with glycemic load as well, which tells you how much carbohydrate is actually in the food. It is better to also judge foods by the glycemic load, not just their glycemic index. Carrots have a low glycemic load.

At any rate, adding a nut butter, which is protein and fat, lowers the GI value anyway. So if carrots are your thing, crunch away!
