I'm making this for dinner tonight and it's REALLY good! The original recipe called for bacon and white rice, but I usually leave the bacon out anyway. I met a guy from Jamaica in the grocery store and he said brown rice would be great for this recipe.

Jamaican Rice & Peas- Core version

1 pound extra lean ground beef
1 onion -- chopped
1 clove garlic -- minced
2 tablespoons canola oil
1 28 oz/ 796 ml can diced tomatoes -- undrained
1 19 oz/ 540 ml can red kidney beans -- drained and rinsed well
1 1/2 cups brown rice
3/4 cup water
2 teaspoons dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
hot pepper sauce to taste

1. Cook beef in a large saucepan over medium heat until cooked. Remove
beef with a slotted spoon and place in a bowl. Pour off al fat from
saucepan. Add onion and garlic, then cook, stirring frequently, over
medium heat for 5 to 7 minutes, until onion is soft but not brown.
2. Stir in tomatoes with their juice, beans, rice, water, thyme, salt and
pepper, then bring to a boil over high heat. Reduce heat to low, then
simmer, covered, until rice is tender and has absorbed most
of the liquid, maybe 40 minutes. Add cooked ground beef.
3. Remove sauce pan from heat and let stand, covered for 10 minutes, until
most of the liquid is absorbed. Seasoned with salt and hot pepper sauce to
taste.

I've edited the cook time on the recipe- it took about 40 minutes for the brown rice to cook. :eek: Even then a little of it was crunchy, but OH SO GOOOD!! My husband really liked it, and even the kids didn't complain that I switched to brown rice in the recipe.

Would some diced, browned Canadian bacon work as a replacement for the bacon in the original recipe?

I'm not sure, since Canadian bacon isn't as fatty as regular. The bacon in the recipe was cooked first in the pan, removed and all but 1 tbs of the fat poured off. Then you were supposed to cook the onions and garlic in the remaining fat. The cooked bacon was then crumbled over the top of the cooked dish.

Even when I wasn't doing WW I never bothered with the bacon, although I used to keep a container of bacon grease in the fridge and use that sometimes to fry the onions. Can you believe people used to have bacon grease just sitting in the fridge? My parents had a container, my grandparents, my in-laws... I guess it was a hold over from when we didn't want to waste anything...

Looks GOOD! :)

I was looking at a Hoppin' John recipe (and the notes I had made), and by making the dish with brown rice in the pressure cooker, the rice "popped open" and became soft like white rice! :eek: :D

I've never used a pressure cooker- been too afraid I woud blow it up like my mom did one thanksgiving. Potatoes everywhere! :lol:

I had some of this for lunch today, and it's really good reheated. The rice had softened by then and it was creamy. A bowl of that and some cut up tomato on a side plate was a really filling lunch and it was POINT FREE! :eek:

Overall it's been pretty good, I'm surprised!!

Yesterday I had a 4 point chili from Wendy's for lunch, and everything else was core.

Today has been fine, except for the slice of pepperoni pizza that found it's way into my mouth before I could stop it (the kids' didn't eat all the slices for their lunch). THAT'S going to cost me big time, but other than that it's really been easy.

I've been gauging my hunger levels throughout the day, drinking my water in Crystal light form, nibbling some carrots if the water doesn't work. Except for the pizza, I think this is gonna be alright! I don't know if I can keep it up long term, though. I'll take it a day at a time.
