This is Core. Potatoes are limited to one meal.

Cajun Ham And Potato Bake From " Simply The Best "

Makes 2 servings

1 TBS. red wine vinegar
1 TBS. Dijon mustard
2 tsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. cayenne pepper
2 small all-purpose potatoes, scrubbed and thinly sliced (Use your Spirooli or spiral-cutter! )
1 onion, thinly sliced
3/4 C. diced lean ham, or Canadian-style bacon

1. Preheat the oven to 350 degrees F. Spray a 9" square baking pan with nonstick cooking spray.

2. In a medium bowl, combine the vinegar, mustard, chili powder, cumin and cayenne. Add the potatoes, onion, ham and toss to coat. Transfer to the pan.

3. Bake, covered, until the potatoes are almost tender, about 35 minutes; uncover and bake until the potatoes are tender and browned, about 10 minutes longer.

Per Serving: 204 calories, 3 g. total fat, 1 g. sat. fat, 26 mg. cholesterol, 639 g. sodium, 31 g. total carbohydrate, 4 g. dietary fiber, 12 g. protein, 32 mg. calcium.
