You'll live long and prosper after tasting these yummy treats:
Ingredients/Method:
In mixing bowl, measure 2 cups of quick oats, 1/4 cup of cocoa, 1-1/2 cups hot water and 2 tsp instant coffee powder (I used vanilla falvoured coffee - Yum!). Let sit 10-15 minutes.
In another bowl, combine 2/3 cup oat bran, 1/2 cup Splenda, a pinch of salt and 2-1/2 tsp. baking powder. Combine with mixture in first bowl and stir. Mixture will be really thick and stodgy. Cover bowl with plastic wrap and place in fridge to chill for 1/2 hour.
Preheat oven to 350 degrees. At the end of the 1/2 hour, remove the dough from the fridge onto a cookie sheet that has been sprayed with PAM, and with hands sprayed with PAM (dough is sticky!) shape into a log the length of the cookie sheet. Bake for 15 minutes, then remove from oven and with serrated knife, carefully cut into thin slices. Lay the slices flat on the cookie sheet and bake for 10 minutes, flip over and bake for another 10.
You'll get around 24-30 slices, and since the only items with Points are the oatmeal (8 points) and the oat bran (4), this makes 2 biscotti for 1 Point!
