I came across this on the WW site and thought it might be good for the holidays. I ran it through the recipe builder and it came out to 2 points per serving. That's the first time I used the recipe builder, it doesn't give you the actual nutritionals, just the points. :(

Candied Sweet Potatoes

Ingredients

1 serving cooking spray (5 one-second sprays per serving)
1 1/2 pound sweet potato(es), peeled and cut into 1-inch chunks
8 oz canned crushed pineapple in juice, undrained
3 tsp McNeil Specialty Products SPLENDA (R) No Calorie Sweetener
1/4 tsp ground cinnamon

Instructions

Preheat oven to 425ºF. Coat a 2-quart casserole dish with cooking spray.

Place potatoes in prepared dish. Combine crushed pineapple, Splenda and cinnamon in a small bowl; add to potatoes and toss until well mixed. (Note: You can use canned sweet potatoes in water to save time, if you prefer.)

Bake, stirring after 30 minutes, until sweet potato mixture is bubbly, about 45 minutes. Yields about 1/2 cup per serving

Looks good thanks ,

For years I have used brown sugar twin in my sweet potatoes for Holiday's, Now I will put Pineapple in them.:)

Ok, if this tastes are awesome as it smells when I am putting it together, I am in for a real treat! I will check back after I eat. :D

This was just awesome! DH and I ate it up and realized we were so full that we did not even need an afternoon snack.

However, the one thing I will change next time is to add another can of pineapple and add a touch of nutmeg and salt. I also overestimated and will cut the serving size to 4 instead of 3.

This is Good Stuff! :D

I packed it in very small Gladware containers for DH to add to his brown bag lunches. It's like dessert! :bcbsalute
