I was looking at the Quinoa Web Site (http://www.quinoa.net) and came across this recipe that looked good for the holidays. If you use olive oil and leave out the walnuts it's totally Core. Or you could count the walnuts with WAPs.
Quinoa Wild Rice Dressing
5 cups cooked Quinoa
2 cups cooked wild rice
3 cups celery, chopped
1 onion, chopped
3 cloves garlic, crushed
½ cup parsley, chopped
¼ cup olive oil or butter
½ cup scallions, chopped
½ cup walnuts
1 cup mushrooms, sliced
1-tablespoon sage, rubbed
1 teaspoon rosemary
1 teaspoon thyme
salt and pepper to taste
In ¼ cup olive oil or butter sauté celery, onion garlic, scallions, parsley, sage, rosemary, and thyme. Add mushrooms and walnuts. Toss with Quinoa and wild rice. Bake at 350º for 30 minutes.
If stuffing a turkey delete oil and do not sauté. Just toss raw ingredients, spices and nuts with Quinoa and wild rice. Stuff turkey and bake until tender.
