View Full Version : Creamy Bulgur Breakfast

I thought I'd post this here as well as it's totally Core..
Usually when I plan to have bulgur for breakfast I nuke 40g of bulgur in 1 cup of milk sweetened with DV SF syrup for 2 minutes, then I let it sit in the fridge overnight.
Last night when I went to make my bulgur for today's breakfast I found I was almost out of milk. :(
I only had just over 1/4 cup of milk left so I nuked the 40g of bulgur in the milk and a big splash (about 3tbs maybe? I'll measure next time) of DV SF German Chocolate Cake Syrup for 2 minutes.
I let it cool a bit then I stirred in just under 3/4 cup of FF plain yogurt and put it in the fridge overnight. OMG! This morning I had this creamy, yummy, almost pudding-y bowl of heaven. The bulgur gave it a great chewy texture that I just loved.

Do you reheat the bulgur or eat it cold?? I've only had it in tabouleh. I bought a bag recently because of some recipes that call for it but didn't know how to cook it. Thanks for the suggestion.

I ate this with the yogurt cold and it was really good. I haven't tried hot yogurt so I'm not sure if I would like it.
When I make it with all milk I will sometimes heat it up and sometimes not.
When I make it with Chai flavor syrup I really like it warmed up.
I just nuke it 2 minutes in the morning when I do it that way.

Silly question, but how many cups is 40g of bulgur? I want to amke this in the morning!

I have to share that the last two times I've made this I've added 1 point's worth of dried apricots when I mix in the yogurt the night before. The apricots swell up over night and add a great chewy texture to the bulgur.
I'm lovin' this! YUM! I used amaretto one time and white chocolate DV today.
So good.

Where in the grocery store do you find bulgur? I have looked for it a few times before, and can't find it :(

My store carries it in the "healthy foods" section. Do you have Kroger in SC? That's where I generally get it.

Yay, I am just starting CORE on Monday and bought bulgar today. My DH asked me what I was going to do with it and I said I wasn't too sure. :headover: This sounds like something I am going to like, plus I like to prepare something at night for breakfast since I work out in the morning. I have a ton of DV syrups to try.
I assume the overnight is to soften it up since it looks pretty tough.

I am working night shifts this week and took this last night to eat in the middle of the night. I'm not sure how I felt about it - it was OK, I've made more for tonight, but I don't think it will become something I just HAVE to have. I have a bag of bulgur so I have to use it somehow. I am wondering what else to make with the bulgur as I can't see using it all up with this breakfast food. I will say it was chewy and I wasn't hungry after though.

I have had the greek salad w/chicken which is wonderful. I am going to try the Moroccan salad (which has 18 gms. fiber per serving). You can always substitute different veggies which these salads will be great if you need cold salads during the hot months or have to bring something to a pot luck.
Joanne: Can't wait to try. Thanks. I love bulgur but have only had it mostly in salads. Have been looking for more things for my SF DV "white chocolate". Gosh, now that I think of it, your recipe with the chocolate could be like a new version of an evening snack, kinda like a tapioca pudding.

This is a totally awsome recipe. I love this for breakfast, lunch, dinner, snack. I use peaches in mine usually though. I put fresh ones in the night before and they are awsome. I am sure almost any fruite would be good, but peach is my favorite and any DV is good that I have tried thus far. White chocolate DV is my favorite though.

DV is Davinci.
You can buy them direct online at www.davincigourmet.com and many other online sites. Some SuperWalmarts, Krogers and Albertsons have one or two flavors in the coffee aisle. TJMaxx and Marshalls sometimes carry a limited selection as well. Cost Plus World Market carry the Torani brand which is just as good IMO but doesn't have as many flavors. Some coffee houses and "lo-carb" stores carry them as well, but generally I've found them to be more expensive than buying online even with shipping.
They have 0 points. It's basically liquid Splenda with flavors.

I am in love with this stuff!! I tried it without the yogurt (just bulgar, milk, and divinci) and I didn't like it as much.. so back to the plain yogurt! MMmmmm
Here's what I did for tomorrow morning
Mixed 40 g of Bulgur with 1/2 cup Milk & Splash of SF Caramel Divinci
Once completed and cooled a little added 1/2 cup Plain Yogurt, Some cubed apple, and a few walnut (count for these)
It tasted like a caramel apple MMmmmm!

Had this for breakfast this morning...yummy! I did the 1/4 cup bulgur with 1/4 cup of skim milk, 1 oz. of vanilla flavored sf syrup, then added 1/2 cup of ff plain yogurt, refridg all night, then this morning I added 2 sliced fresh peaches, and some cinnamon and a little dash of splenda...it reminded me of rice pudding kinda, loved it, and nice change up when I get tired of my summer muesli!

I have a question though....how do you nuke bulgar without it spilling over the top? I used 1/4 c bulgar, 1/2 c milk and a splash of caramel syrup....I put it in the microwave for 2 minutes, but after about a minute and a half, it was bubbling and splling over the top, but it wasn't cooked yet. I had to take it out and put it back in for short periods of time over and over again, and I had to sit there an watch it to make sure it didn't spill over again. I think I ended up losing about 1/4 of it. Any suggestions?

Any suggestions?I usually either use a bigger bowl.. or I watch it and once I see it start to bubble over I open the microwave, let it go down, re-start the microwave.. (but this is more of a pain cause You have to open it about every 10 seconds)
Also... the bulgar will not taste done after 2 minutes but it will be completely done by morning.
