View Full Version : Carpender's Unstuffed Cabbage (x-post)

Another yummy low-point dish from the kitchen of Dana Carpender... she rawks! :strong:
1 pound extra lean ground beef (at least 93% lean)
1 medium onion, chopped
1 tsp minced garlic
1/2 head cabbage, shredded or 1 (10 oz) bag angelhair coleslaw
1 (8 oz) can tomato sauce
2-4 tsp lemon juice
1/2 tsp pepper
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp salt
Brown the meat, onion and garlic in a large skillet. Add cabbage when meat is mostly browned. Cover and allow cabbage to wilt a bit. When cabbage is done to preference, add the tomato sauce through salt and combine well. Let simmer five minutes, then serve. I usually serve a starch on the side but you could easily add bulgur or brown rice to keep it CORE.

This sounds delicious! Think I will serve it with bulgur. I probably will substitute Morning Star Crumbles for the beef. I haven't used beef in recipes that has to be crumbled and browned since I discovered Morning Star! Thanks Paris for this recipe!

This is great! I have a big 1/2 head of cabbage left over from the Cabbage and Yukon Gold Casserole and this is a great way to use it up! Thanks!!

Who would have thought that a ground beef casserole with cabbage could possibly be a trigger food for me - LOL?! This was soooooo good, I'll be making this a lot. Thanks so much for this keeper, Paris.

Hee! Judy, it's a bit of a trigger for me too. I used to eat one serving with a side of bulgur or hot veggie but now I just eat 2 whole servings and call it a large meal.

Hi y'all!
I made a tweaked version in the crockpot.
I used a whole head of shredded cabbage, one onion, 4 cloves garlic, 1 1/2 cups homemade chicken broth, 8-oz tomato sauce, 6-ounces tomato paste, 1 TB ketchup and 2 TB soy sauce. To that I added 12-ounces Morning Star Farms crumbles. Deeee-lish! Next time though, I'll double the "meat" and I'll use my Black Bean Burgers crumbled (added at the last minute and heated through so they won't get soggy) instead of the store-bought crumbles. This was really yummy! Thanks Paris!

Hello Paris,
I joined WW last Wednesday and trying the core program for the first time. I just wanted to let you know your unstuffed cabbage recipe was great, even my boyfriend liked it and he doesn't like any vegetables!!
